Thai lemon coconut soup

Made the yummiest Thai soup last night! Wanted to share the recipe. All you do is cook some onion and a bit of garlic in some olive oil for about 15 minutes or until nice and caramelized. (Chop the onion and garlic in small pieces) Then you add one can of coconut milk and two cans of chicken broth. You can substitute one can of water for less salt. Let that boil and then you add one green or red bell pepper finely chopped into the pan. I used one green bell pepper. Wait about five minutes and then add one chicken breast also cut into small one inch pieces. Let that cook for about 15 minutes. The final touch: Squeeze the juice of 3 lemons into your soup, add a sprinkle of red pepper flakes, and some fresh cilantro and voila you have amazing Thai soup. Perfect for this cold weather!
